Meatless Monday: Week 3
Today is my 3rd Monday going meatless…along with my kiddos. (Click here for the post from day 1 if you missed.) My husband has conveniently had recruits on campus (he’s a college coach) during dinner after the first Monday. After my week 1 recipe, I don’t blame him 🙂
The hardest challenge for me has been finding good recipes for dinner. Breakfast, lunch and snacks have been pretty easy, but I always have the bad habit of searching for recipes with a few ingredients I want to use instead of picking the recipe first. I’m also trying to use Meatless Mondays as a way to try new healthy ingredients, which makes it exciting, yet challenging.
The good news is that after week one, there was only room for improvement 🙂
Week 1 – My ingredients: red potatoes & lentils.  I found this Lentil Stew with Spinach & Potatoes recipe & this Slow-Cooker Sweet Potato & Lentil Soup recipe . Unfortunately, I merged the 2 recipes and it did not turn out very well. Luckily I had MorningStar Garden Veggie Patties on back up and they were a hit.
Week 2 – My ingredient: tempeh. I made these Italian Flavored Tempeh Nuggets and mixed it with pasta sauce and a frozen vegetable mix. It was really good and the kids loved it.
Week 3 – Â My ingredients: tofu & vermicelli. I am still searching for the perfect recipe, but thinking of going with this Thai-Style Vegetable recipe. Any last minute suggestions??
