NO BAKE ENERGY BITES
Last week I had a back-to-back cookie events….a cookie swap for 100+ people and a school bake sale. I don’t love to bake, so to be honest I wasn’t thrilled about either.
Last year, I skipped the cookie swap and didn’t bake for the school fundraiser. This year I decided to embrace my inner Scrooge, get a little more into the holiday spirit and contribute to both. However, it wasn’t until my “light bulb moment” baking a batch of these energy bites a few weeks ago that I truly changed my tune.
What a perfect alternative to the typical cookie. No baking required.
They are packed with healthy ingredients and fulfill the sweet tooth. They are simple to make…just mix all the ingredients, cool in the fridge and roll into balls! They are also a unique treat to bring.
So many positives, it got me right into the holiday spirit!
No Bake Energy Bites
Ingredients
- 1 cup oatmeal
- 2/3 cup coconut flakes (optional: toasted)
- 1/2 cup peanut (almond, sunflower) butter
- 1/2 cup ground flax seed
- 1/2 cup chocolate chips or cacao nibs
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds (optional)
Directions
- Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour (or shorter/longer depending on your schedule. This makes it easier to roll.)
- Once chilled, roll into bite size balls. Store in an airtight container and keep refrigerated for up to 1 week or put in the freezer.
- Makes about 2 dozen balls, depending on size
After school on the day before the bake sale I was talking to another mom about the packaging for the cookies. I assumed plastic baggies were fine. She said, “Oh no! You need to go to Michaels and get cute, festive ones and add ribbon.”
I knew there was zero chance that I was going to make it to Michaels or anywhere, for that matter, to get festive packaging. In the past, I may have panicked a little. Fortunately, I know “good is good enough.” Moms especially put too much {un-necessary} pressure on ourselves! It was a big accomplishment to get these suckers done, no need to push it.
I dug into my daughter’s craft supplies and felt pretty pleased with this quick, no stress & somewhat festive packaging. 6 bags completed in about 3 minutes. (I apologize to the crafty readers that are cringing at this!)
